Inspired by Stacy and her friends with their Menu Plan Monday, I've decided that I really need to get back to menu planning. There was a time when I always planned our menus ahead. Over the last several months, however, it's a job I let slide. It seemed easier to "play it by ear" and not spend that hour or so planning. Of course, I know in actuality that spending that hour up front not only saves me time in the long run, but also money. So, it's time to back on the right track.
I don't plan what we will eat each night, because that will just depend on how a particular day plays out and how much time I have to devote to cooking supper. But I will be planning the week ahead with 7 suppers, 2-3 lunches, 1 "hot" breakfast, and at least 1 baked item/dessert.
So, here's what we'll be eating this week...
*For supper:
Bagels w/ cream cheese and Fried eggs
Bean enchiladas, Wankerflots, Chili Cheese Puff
Salsa Pasta and Italian Bread
Ladle-It-On, Cauliflower, Zucchini Oatmeal Muffins
Chicken & Rice, Broccoli, Poppy Seed Muffins
Chicken Sandwiches, Fries, Corn
Almost Stuffed Peppers, Corn Bread, Applesauce
*For lunch:
Quickie Pizza
Cheesesteak Sandwiches
*For breakfast:
Blueberry Spice Coffeecake and Cantalope
*Dessert:
Oatmeal Coconut Choco-Chip Cookies (a new recipe)
A lot of easy nights this week. It's going a busy one, because it's the last week of the second quarter. We've got to finish up a lot this week, and then I have to write up the quarterly report to send in. This is no easy task, but is required by NYS homeschooling regulations. Anyway, that's my excuse for the simple meal plans.

Oh yeah, I love that you are back to menu planning. I think it really does help, cuts down on stress, cuts down on impulse buying at the store and lots of other pluses. At least to me!
This all sounds good, but there are a couple of things on here I've not heard of (wankerflot, salsa pasta, and is something called 'ladle it on'?!). Plus, I really don't consider any of this easy, you're still going to do a lot, but it's probably a lot less stressful than having to come up with these in the late afternoon every day.

Debi I'm envious. I say I want to do this all the time and I don't always follow through. I can't tell you the number of times I just go out and grab something to eat because I don't know what to make for dinner. The fact that Rich and Timmy are so picky make it hard to have the same things all the time! Good luck with your meal planning.

I know what you mean, Dawn! I've got a crew of somewhat finicky eaters myself! Actually, Rich isn't finicky, but the boys definitely are! And Annie has been a vegetarian since age 6, so that further complicates matters. I just make sure we've got plenty of fruit, cheese sticks, and the like to supplement the kids meals. And frankly, I've gotten to the point where I just tell the boys, eat or don't eat...it's up to you, but you're not getting snacks if you choose the don't eat option.
