Menu Plan Monday

This past weekend was our family reunion. We had a great time and ate way too much. Of course, now, despite only having been away for three days, I feel terribly behind on everything. Piles of laundry to do, e-mails to return, blogs to catch up on, errands to run. Along with unpacking last night, I did also manage to throw together a quick menu plan. Thank you Laura for this measure of sanity it will bring to my week as I try to get us back on track. (Of course, I still have to hit the grocery store this morning to be able to pull off this plan.)

Anyway, it worked really well when I planned all three meals, so I thought I would go that route again. But I did only plan Monday-Friday. Just wasn't sure what we'd be doing next weekend yet, so I'll plan that after we figure it out.

*lunch--mini bagels with cream cheese/blueberries

*breakfast--dino eggs oatmeal (which, by the way, Dawn, are just a kind of instant oatmeal that have "dinosaur eggs" in them which "hatch" when you add the hot water...easy way to get kids to eat oatmeal)
*lunch--PB&J/cheese sticks/nectarines
*supper--bean enchiladas/wankerflots (doctored up refried beans)

*breakfast--cold cereal/bananas
*supper--chicken macaroni casserole (new recipe)/broccoli/cherry muffins (new recipe)

*breakfast--orange slushie (new recipe)/toast
*lunch--homemade mac & cheese/baby carrots
*supper--cornbread chicken tenders (new recipe)/pizza salad/homemade rolls

*breakfast--scrambled eggs/bacon/English muffins
*lunch--beef soup in a hurry (new recipe)/sandwiches
*supper--stir fry

Now, I guess I best go make a grocery list and plan our other errands. Keeping my fingers crossed for three cooperative kiddos this morning. The one good thing about running errands today will be that we'll get to be in the car for a bit...and the car is air-conditioned. It's days like today, when it's supposed to be 95 degrees, that I almost miss Memphis. Sure, it will probably be a few degrees hotter there yet and probably a bit more humid. But at least in Memphis, there was air-conditioning!

Okay, it's too early for me, LOL. I read that as broccoli cherry muffins. You almost made me gag, LOL!! Your menu sounds yummy this week! Let us know how the chicken macaroni casserole is. It sounds good.

Have fun running your errands! It's a rainy day here. I'm not going anywhere, LOL.

I thought you were trying to fix broccoli/cherry muffins there for a minute, too! I was going to be thoroughly impressed if your kids ate those! Stay cool today (I have a hard time imagining no AC as I really, really dislike heat - I'd be in the car all day every day!

Thanks for the info on the dino oatmeal. I'll have to look for that!
It's supposed to be warm here too, but right now with the AC on it's cooler outside.
I'm searching for a chicken recipe...if I find it, I might be tempted to make a dinner menu myself :)

take care,

Gosh I just can't imagine that kind of heat. I guess I'll soon find out when I go to Ont. Here it hasn't been over 20 degrees celcius yet. sigh..

Sounds like a great menu. I'm hoping for three cooperative kids too as I head out to do my grocery shop this am.

Good luck!

Great menu and very detailed....the pizza salad sounds like a fun summer meal.

Ok wait, I'm taking a moment here to digest AC? I know I wouldn't make it at all! I'd have to live in the car or somewhere where there was ac!

Great sounding menu, and I'm so thoroughly and completely impressed that you plan all 3 meals, plus do that much cooking. I'd be totally worn out :)

Gosh, I can't believe it's 95 where you are and NO AC! Ack, I wouldn't make it very long in that heat without air conditioning!

Have a great day and a terrific week :)

Hee Hee! I had to laugh at wankerflots ~ what a word!

PS - Debi, you should contact me with your e-mail address so I can send you more personal notes instead of trying to write you here in the comments field :-)
